Description
Crisp veggies, child kale, and a creamy cashew tamari dressing make this salad good for a reset.
- 4 cups child kale
- 2 cups backyard lettuce (or any combined greens)
- 2 child cucumbers, thinly sliced
- 1 avocado, diced
- Handful of cherry tomatoes, halved
- 6 radishes, thinly sliced
- 1/2 fennel bulb, thinly sliced
- 3 tablespoons sunflower seeds
- 3 tablespoons sesame seeds
- Optionally available garnish: cilantro and edible flowers
for the cashew tamari dressing:
- 1/2 cup extra-virgin olive oil
- 2 tablespoons balsamic vinegar
- 6 tablespoons tamari
- 1/2 cup uncooked, unsalted cashews
- 1/4 cup water
- Make the Dressing:
In a blender, mix the olive oil, balsamic vinegar, tamari, cashews, and water. Pulse a number of instances till the combination is emulsified and clean. Style and alter seasoning if wanted. - Put together the Salad Base:
Layer the infant kale and backyard lettuce in a big salad bowl. Prime with sliced cucumber, avocado, cherry tomatoes, radishes, and fennel. - Add Seeds:
Sprinkle sunflower seeds and sesame seeds excessive for further crunch and taste. - Gown & Toss:
Drizzle the cashew tamari dressing over the salad. Gently toss every part collectively till nicely coated. - Garnish & Serve:
Scatter contemporary cilantro leaves and some edible flowers on prime for a pop of colour (optionally available however so fairly!).
