Description
This straightforward Tremendous Greens Frittata recipe is impressed by my favourite Erewhon breakfast. Full of recent greens and herbs, it’s a scrumptious and wholesome option to begin the day.
- 1 onion, chopped
- 2 cloves minced garlic
- Additional virgin olive oil
- 5 ounces spinach, child kale, or energy greens combine (a complete clamshell container)
- 2 bunches recent herbs, leaves chopped and stems discarded (cilantro, parsley, dill, basil—no matter combine you want)
- 5 eggs
- 1/4 cup grated parmesan
- 2 tablespoons milk
- 1/2 teaspoon baking powder
- Kosher salt and freshly floor black pepper
- 1 bunch inexperienced onions, thinly sliced
- For garnish: extra herbs, (optionally available) edible flowers
- Preheat the broiler in your oven.
- Set an 8 – 10-inch cast-iron or nonstick pan over medium warmth. Coat the underside with a skinny layer of oil, then add the onion. Season with a pinch of salt, and prepare dinner, stirring often, till softened, about 5 minutes. Add the garlic and saute for a few minute.
- In the meantime, mix the eggs with the parmesan, milk, baking powder, and a pinch of salt and pepper. Whisk till mixed and foamy.
- Add the spinach to the pan and canopy. Prepare dinner for 3 – 4 minutes till beginning to wilt, then stir to evenly distribute within the pan. Sprinkle the herbs and inexperienced onion evenly excessive. Pour the egg combination excessive, and tilt the pan to evenly distribute.
- Let prepare dinner for a few minute on the stovetop, then switch to oven and broil till simply set and turning golden brown on prime (about 5 minutes).
